Crowd Pleasing Meatball Tortellini Soup

I've posted this on my weekly menus several times. I figure it's high time I shared this simple recipe that tastes so good.

Crowd Pleasing Meatball Tortellini Soup
1 small onion, chopped
2 chopped celery stalks (including leaves)
2 sliced carrots
2 T. olive oil
2 medium zucchini, sliced
2 medium yellow squash, quarter sliced
1 can cannellini beans
1 can chopped tomatoes
64 oz. chicken broth
meatballs
tortellini

1. Saute onions, carrots and celery for about 3 minutes.
2. Add zucchini and squash and saute until soft, about another 5minutes.
3. Add cannelini beans, tomatoes and salt and pepper.
4. Add broth and bring to a light boil.
5. Add meatballs and simmer until meatballs are cooked through.
6. Add and tortellini and continue to simmer until pasta is al dente.

Top with parmesan cheese and serve with a fresh loaf.

I sometimes add spinach as well. You can doctor this up however you like. It's hard to go wrong. I haven't met a crowd yet who doesn't love this soup. (It's great for new moms too.)

Thank you!! It also freezes well. I just placed individual size portions into zip lock bags, put them in the freezer, and just pull and defrost for lunches.... yummy!
