I'd love to have the recipe for the Santa Fe Salad if you wouldn't mind! I'm all about salads this summer and always on the lookout for a new one...thanks!

Karmen: So sorry for my late reply. My Santa Fe salad is very simple. Romaine lettuce with tomatoes, black beans (drained and rinsed), corn, avacado, black olive, tortilla strips, pepper jack cheese with vinagrette. Sometimes I change it up with a creamy cilantro vinagrette. Hope that gets you going on something different. I honestly think I could make a new salad a night for a long time. There are so many directions to go.
