Week night dinners need to happen for me in 30 minutes or less or they need to be cooking on their own in the slow cooker. We get home from school at 3:30 and four days out of the week someone has an after school activity (softball, baseball, piano and ballet). The other kids and I hit the park to play, play, play. That means we walk through the doors at 5 or 5:30 and the kids are ready to eat at the exact moment they cross the threshold. Even with a snack after school, they are hungry growing kids.
So, I've added new feature to my planning. Instead of scrambling for a carb snack out of the pantry I'm getting back to my appetizer planning. We will just start a course early and have a snack prepared for munching while I prepare dinner. They are all light and limited so dinner is still consumed. (The items in italics will be our appetizer course.)

Do you do your prep a couple of nights a week for your apps and dinner? Seriously you amaze me. I have been having fun with the meal planning, I feel so much more prepared for our night. Not to mention my husband and I have really enjoyed the stressless part of planned meals.
Tonight we're having burgers with carmelized onions & blue cheese, salad with balsamic ving. and oven fries. Now here's to hoping the boys will eat it. :)
Like apps, as part of dinner vs the crazy snacks before dinner. I do that once in a while but love that you are doing it every night. ( baseball season is crazy) You have got some good ideas, to get my mind thinking..... Shrimp Cocktail is a hit in our house.
