Lunchtime Favorite

My lunch is extreme. Either I make something pretty flavorful or I'll nibble on some leftovers. I'm not much of a PB&J girl. A sandwich needs to be good or else I'd just rather do without. So, I've been perfecting this ensemble.

It's inspired by a chicken sandwich from Nordstrom Cafe (so tasty!) and Giada's veggie sandwich (I can't wrong with a goat cheese and veggie combo). My current go-to for lunch is looks something like this:

Toasted focaccia roll
Micro greens
Grilled eggplant
Caramelized onions
Herbed goat cheese
Chicken
Sundried tomatoes

I think it still needs the perfect aoili or spread. Maybe I'll try the artichoke spread from Tjs. Or further investigate Nordstrom's version--their aoili is just the right amount of flavor and moisture.

Yummmmmm! Do you make up a bunch of eggplant, onions, and chicken and keep on hand for the a few days? Or do you make it to order every time?

Mybelle: I grill the eggplant and onions once. I make the eggplant and goat cheese (with ponzu) snacker a lot so I find myself preppping eggplant each week. I don't have time to do much so I grill everything once and then use it throughout the week or weekend. I vary this sandwich with what I have on hand. It is really good with arugula and avacado too.

Yummmy! My fave at Nordie's cafe is the Berry Salad with a cup of Tomato Basil Soup. Haven't tried to replicate yet. You've inspired me to do so!:)
