We hit the farmer's market and got some essentials for this week's meals. It will be a light, not-too-involved menu since the husband will be missing a few dinners.
Ravioli with bolognese
Zucchini with onion
Taco salad (Monica's slow cooker chicken concoction)
Rice
Swedish Meatballs
Red potatoes
Yellow squash
Pesto broccoli pasta
Salad with strawberries, goat cheese and walnuts

Ok, it's actually a slow cooker recipe that is more of a stew. The flavor was great but it was a little watery. I think I need to perfect it a bit. Basically dump the following in a slow cooker:
chicken tenders/breasts
TJ's salsa verde
1 bit of red salsa
black beans
pinto beans
Top with cheese, cilantro, tomato, avocado and sour cream or mexican cream.
I served ours over brown rice and scooped with Have A Chips. Very flavorful.
Oh yes, and you could add corn. You can add corn to anything!
