Three Scoop Taco Salad

Tacos make a regular appearance at our table. Shredded chicken tacos, fish tacos, soft tacos, crispy tacos, and even tostadas and shrimp fajitas fall into our our taco nights. This week's variety was Three Scoop Taco Salad.

This is a good meal for entertaining with kids. Simply set up a bar, just like with tacos or tostadas, and finicky eaters can delight in adding...nothing...Folks who like a little more flavor can layer those on as desired. All will walk away satisfied.

My very loose recipe follows. With a bar-style meal, there are lots of variations along the way. This is what we had on our last taco night. Next time it will probably look differently, since that's how we roll.

Three Scoop Taco Salad
1 bag scoop or tortilla corn chips
1 lb ground turkey or beef
1 cup salsa*
14 oz refried beans (black beans would be great as well)
Spanish rice with corn**
Cheese
Lettuce
Pico de gallo (tomatoes, cilantro, white onion, squeeze or two of lime)
Black olives
Avocado
Salsa verde
Fresh lime
1 can V8***
Cumin
Chili powder

* We always have a supply of homemade salsa or Costco's organic salsa on hand. It's fantastic with eggs, impromptu burritos, baked potatoes, etc...

** Spanish rice can be as simple as combining brown rice, onion, salsa, corn, chili powder, cumin and salt. Or just pick some up from your favorite taco shop. Or use a boxed mix. Whatever you have time for.

*** I add V8 to anything I can get away with, especially when the kids put on their finicky hats. A few extra 'veggies' isn't a bad thing. And when every other ingredient is whole and from scratch, I count the V8 as the salt.

Brown turkey. Add cumin and chili powder and V8. Simmer until juice is reduced as desired.
Heat beans. Cook or heat rice. Combine chopped onion, cilantro, and tomatoes and squeeze with a lime and add a pinch of salt. Chop lettuce and slice avocados and olives.

To assemble line bowl with chips and layer with a bed of lettuce. Add one scoop of beans, rice and ground turkey (hence the three scoop namesake). Top with cheese. Continue with your toppings as you desire (avocado, pico de gallo, salsa verde, lime, etc).
