How yummy does this look? I will be trying these grilled eggplant wraps with goat cheese this weekend. Anna would eat a whole barrel full of zucchini if we had it so I may mix and match eggplant and zucchini. De-lish!
The recipe is very Pittsy-style (no measurements). Grill some veggies with EVOO and seasoning, roll them with goat cheese and herbs. Maybe add some citrus zest for a kick?
By the way, I hear Elie Krieger has a similar recipe in her new cookbook.

Yum ...these look great! I'll be making these too.
We made these this past weekend with eggplant and zucchini. The zucchini is best with the skin. We dipped ours in Ponzu sauce and devoured them. The salt and citrus combination in the ponzu is perfect with the rich, creamy goat cheese. A definite repeat offender here.
